Basic Cupcake recipe can be found on Taste.com.au
Milk Chocolate – cooking chocolate
Sprinkles – assorted colours
Premade icing – assorted colours
200g unsalted butter, softened
1 teaspoon vanilla extract
1 cup caster sugar
2 1/2 cups self-raising flour, sifted
1/2 cup milk
Preheat oven to 160°C fan-forced oven. Place waffle cones in the holes of a cooling rack.
Using an electric mixer, beat butter, vanilla and sugar in a small bowl until light and fluffy. Add eggs, 1 at a time, beating after each addition (mixture will separate at this stage). Transfer mixture to a large bowl. Stir in half the flour. Stir in half the milk. Repeat with remaining flour and milk until combined.
Fill the waffle cones half way with the mixture. Place the waffle cones on the oven rack and place a baking tray on the bottom of the oven to catch any spills. Bake for 15 to 17 minutes or until golden brown.
While the waffle cones are still warm and soft cut the tip off and slide in the pretzels. Stand cakes on a wire rack to cool.
Melt chocolate in the microwave for 10 seconds at a time to ensure that you don’t burn the chocolate. Stir at each interval.
Dip large end of cone into the chocolate and turn in hands to remove excess chocolate.
Roll the chocolate covered area in the sprinkles and place in the fridge on backing paper to set.
Further decorate with icing as desired then place back in the refrigerator to cool.
Mix desiccated coconut and green food colouring and place on a plate to represent grass. Make pathways with brown sprinkles. Place your teepees on the plate and enjoy!
Your child and their friends will love their very own Teepee Cakes!
