Ingredients 185g butter, softened 3/4 cup caster sugar 1 teaspoon vanilla extract 1 egg 2 cups plain flour 1 ½ cups icing sugar 1 eggwhite 1 teaspoon lemon Sprinkles Food colouring Cake pop sticks
Method - Biscuit Base Step 1 Preheat oven to 180ºC/160ºC fan-forced. Line 3 baking trays with baking paper.
Step 2 Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add egg. Beat until combined. Sift flour over butter mixture. Using a wooden spoon, stir to combine.
Step 3 Roll dough into a ball and refrigerate for 30 minutes before rolling.
Step 4 Roll the dough out on a floured surface with a rolling pin.
Step 5 Allow enough thickness for cake pop sticks to be inserted in.
Step 6 Use a heart shape cookie cutter to cut out the cookies.
Step 7 Place cookies 4cm apart on prepared trays. Bake for 10-12 minutes until light golden. For even colouring, swap trays halfway through cooking time.
Step 8 While warm gently slide cake pop sticks into the bottom of the heart shape cookies until they are half way into the cookie.
Step 9 Once biscuits have cooled begin icing and decorating them.
Method - Icing Step 1 Lightly whisk eggwhite and lemon juice together in a bowl. Gradually add icing sugar, whisking until smooth and combined.
Step 2 Place food colouring in and combine.
Method - Decorating Step1 Place icing into piping bag and pipe a heart shape onto the cookies.
Step 2 Place sprinkles onto a flat tray or plate and then gently press the iced cookies into the sprinkles.
