185g butter, softened
3/4 cup caster sugar
1 teaspoon vanilla extract
2 cups plain flour
1 ½ cups icing sugar
1 teaspoon lemon

Method - Biscuit Base
Preheat oven to 180ºC/160ºC fan-forced. Line 3 baking trays with baking paper.
Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add egg. Beat until combined. Sift flour over butter mixture. Using a wooden spoon, stir to combine.
Roll dough into a ball and refrigerate for 30 minutes before rolling.
Roll the dough out on a floured surface with a rolling pin.
Allow enough thickness for cake pop sticks to be inserted in.
Use a heart shape cookie cutter to cut out the cookies.
Place cookies 4cm apart on prepared trays. Bake for 10-12 minutes until light golden. For even colouring, swap trays halfway through cooking time.
While warm gently slide cake pop sticks into the bottom of the heart shape cookies until they are half way into the cookie.
Once biscuits have cooled begin icing and decorating them.
Method - Icing
Lightly whisk eggwhite and lemon juice together in a bowl. Gradually add icing sugar, whisking until smooth and combined.
Place food colouring in and combine.
Method - Decorating
Place icing into piping bag and pipe a heart shape onto the cookies.
Place sprinkles onto a flat tray or plate and then gently press the iced cookies into the sprinkles.
